Coriander Powder: Flavour, Freshness and Cooking Tips
Updated 1 September 2026
Coriander (dhania) powder tastes mildly citrusy, sweet and nutty, and thickens gravies slightly. It should smell fresh and lemony; a flat, dusty smell means it is stale. Use one to two teaspoons for a dish that serves four.
What does fresh coriander powder smell like?
Fresh coriander powder smells warm, lightly citrusy and sweet. If you smell mostly dust or nothing at all, the essential oils have faded and the flavour will be dull.
How do you use coriander powder in cooking?
Add it with the other ground spices after the onions have softened. It works as a base for curries, dals, marinades and dry vegetable dishes, and it balances hot spices like chilli.
For a deeper flavour, dry roast it in a pan over low heat for 30 to 60 seconds until fragrant, then let it cool before using.
What can you use instead of coriander powder?
Ground cumin is the closest common swap in a pinch, though it is earthier and less citrusy. Garam masala also works, but it is more intense, so use less.
How long does coriander powder last?
Stored airtight away from heat and light, it keeps its best flavour for about six months. Whole seeds last longer, so grinding small batches at home is an option.
